CIEH Level 3 Award in Implementing Food Safety Management Procedures

Guernsey food law now requires all businesses producing food to have a documented safety management system in place, based on Hazard Analysis and Critical Control Point (HACCP) principles.

This is a new qualification equivalent to the "Intermediate" level.

Course Content

The course follows a defined syllabus;


•  The 12 steps to the HACCP process.
•  Controls required to ensure food safety.
•  Use of management tool such as the FSA's Safer Food Better Business pack.

Who should attend

Primary business owners and/or managers of small and medium sized catering and hospitality businesses.

Assessment

This new qualification will help caterers to implement a food safety management system based on HACCP principles. Assignment completed under exam conditions.

CIEH Level 2 Award in Food Safety

Training providers have identified a growing need to make learning more relevant to the specific business environment to increase effectiveness.

This new qualification equivalent to the the "Foundation" level has has been developed for the catering, retail and manufacturing industries, this qualification replaced the CIEH Foundation Certificate in Food Hygiene.

Course Content

•  Legislation
•  Food safety hazards
•  Temperature control
•  Refrigerating, chilling and cold heating
•  Cooking, hot holding and reheating
•  Food handling
•  Principles of safe food storage
•  Cleaning
•  Food premises and and equipment

Who should attend

Anyone working in catering, retail or manufacturing industry settings.

Assessment

Employees who handle food will gain a firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved. They will have the confidence and expertise to deliver quality food safely to customers. Refreshments of this qualification is recommended at least every 3 years.

Level 3 Award in Food Safety

The Food and Drugs (Food Hygiene) (Amendment) Order 2007 has placed a greater onus and accountability on anyone in the food business with supervisory responsibility. It is therefore vital they are equipped with both the knowledge and confidence to do their job effectively.

New Levels

In response to the requirements of the Sector Skills Council and the Qualifications and Curriculum Authority (QCA), the CIEH have launched new sector specific awards in food safety which will replace the CIEH Intermediate in Food Safety.

Course Content

The qualification covers the following topics:

•  Legislation
•  Supervisory Management
•  Temperature control (chilling, cooking)
•  Cleaning
•  Contamination and control
•  Applying and monitoring good hygiene practices
•  Implementing good food safety procedures
•  Contributing to the safety training of others

Who should attend

This course is designed for Managers and supervisors in medium to large manufacturing or catering businesses.

Level 1 Award in Food Safety

The new CIEH Level 1 awards in food safety are run as half-day courses, suitable for a variety of candidates, including new employees with minimal or no prior food safety knowledge, employees handling low risk or wrapped food or those who work front of house, such as waiting or check out staff, as well as back of house such as kitchen porters and warehouse staff.

Course Content

The training programme follows the following topics:


•  Food safety (food hygiene, hazards, responsibilities)
•  Personal hygiene
•  Cleaning
•  Contamination

Who Should Attend

New employees and employees handling low risk food.
The Level 1 awards are sector specific and the training programme has been developed to allow courses to be tailored to meet the needs of staff working in catering, manufacturing or retail environments.

Assessment

15 multiple choice question examination.

Duration: Half day

Maximum Trainees: 12
